Beer Battered Onion Rings with Southwestern Style Dipping Sauce

Ingredients
- 1 cup oil
Batter
- 2 Cups All-Purpose Flour
- 1 Egg beaten
- 2 tsp dried parsley
- 2 tsp garlic powder
- 2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 cup beer
- 3 large onions sliced into rings
Southwestern Dipping Sauce
- 1/2 cup milk
- 1 tsp tomato ketchup
- 3/4 cup mayonnaise
- 1 tsp sriracha
- 1/4 tsp cayenne pepper
- 2 tsp chili powder
- 2 tsp smoked paprika
- 2 tsp black pepper
- 1/4 tsp cumin
Instructions
- In a bowl, combine flour, egg, parsley, garlic powder, oregano, salt and pepper.
- Gradually add add beer, stirring, until a thick batter forms. Add more or less beer depending on the desired consistency of the batter.
- In a heavy frying pan heat oil over medium-high heat.
- When oil is hot, dip onion in batter and fry, turning once to brown evenly on both sides.
- Drain on paper towel.
- Dipping Sauce
- In a small bowl, combine milk, tomato ketchup, mayonnaise, sriracha, cayenne pepper, chili powder, smoked paprika, black pepper and cumin.
- Mix until all ingredients are combined.
